Cuvée des Fontenelles 2017 / No Sulphites added

The spring was very precocious. It means an early maturity but also a risk of frost. Unfortunatly, it happened at the en of April. Because the altitude of the vineyard we had only 15% of vines frozen. The weather was fine and quite dry during summer and the beginning of autumn, so it was the perfect year to make our first noble-rotten wine. We started the harvest on the 17th of October and the grapes had more than 360g/l of sugar. We made the choice to stop the fermentation with 13,8% of alcohol and 134g/l of sugar ( 8 %). Only 560 bottles are produced, so very rare wine. The nose is expressive with aromas of pineapple, mango and white flowers. In the mouth, there is a well balance between acidity and sweetness and the apricot and candied citrus are very present. The final is long could be compared to the well-known noble-rotten wines. Because Demeter certified, this wine have low level of Sulphites. Nice now, you can keep this wine more than 10 years in a good cellar.
